A weird question and/or a ridiculous hypothetical: does water absorb the nutrients from veggies boiled in it? Like, logically plant parts break down in hot water, thatโs what tea is, but nutritionallyโฆif I were to boil purple cabbage and take that now-purple water and drink it or use it as a condiment, is it the same as eating the cabbage?

this could also have the additional benefit of the pasta soaking up the vitamins and nutrients that veggies lose in the water while boiling!! genius!!!

Pasta broccoli is an absolute staple of my Italian household. However, when the pasta is done, add the broccoli to the pot with a bit of chilli flakes, garlic and olive oil and fry it off, and then add a small amount of water and put the lid on to steam it. Tastes sooo much better
I've always heard that most of the nutrients from the veggies get sapped out into the water when you boil them. Is that a concern after only 2-3 minutes, if I want to keep track of the vitamins I'm getting?
You can take this idea up a few notches by cooking several vegetables in sequence, adding the pasta in at whatever time works best for the specific dish. Admittedly, having two pans going makes prep a bit more simple, but doing it all in one pan, removing then returning things at the end feels more resourceful, and I enjoy that.

I make huge batches of hidden veggie bolognase. Then we have sauce for pasta for a handful of meals and i only need to wash the blender once
