scientifically and technically we can live a full and healthy life without ever eating carbohydrates and we can get all the glucose our body may require thru proteins and fats. there is no such thing as an essential carbohydrate…an inconvenient fact perhaps. that said I probably eat way more arugula, fermented cabbage, garlic, onions, broccoli, artichokes, and kale then any of my vegan friends
